- 300 grams Paneer –
- 2 Onions cut into cubes
- 1 (150 grams) capsicum –
- 3 (250 grams) Tomatoes –
- 2 green chillies –
- 10-12 cashews –
- 2-3 tablespoons oil –
- 2-3 tbsp coriander – (finely chopped)
- 1 pinch asafoetida –
- 1/2 teaspoon cumin seeds –
- 1/3 teaspoon turmeric powder
- 1 teaspoon coriander powder –
- 1 tbsp Kasuri Methi –
- 1 teaspoon ginger paste –
- Garam Masala – less than 1/4 teaspoon
- 1/4 teaspoon red chilli –
- 1 teaspoon or salt as per taste –
- 30-35 minutes
Cut the paneer into 1 inch square pieces. Wash capsicum also thoroughly. Remove its seeds and cut it into square pieces. Heat 2-3 teaspoons of oil in the pan, put the pieces of cottage cheese in hot oil to roast it and roast it from the bottom until it turns brown. When the paneer pieces turn light brown from the bottom, flip them over and let it roast till it becomes light brown from the other side. When roasted on both sides, take out the pieces of cheese in a plate.

Put the capsicum and onion pieces separately in the pan and fry them till they become slightly crunchy. Cover the capsicum and let it cook for 1 minute. Take out the roasted bell peppers in a plate. Likewise fry the onions till they turn golden and leave them in the plate with capsicum. Prepare a fine paste of tomatoes, green chillies and cashews.
Heat 2 tbsp oil in a pan. When oil is hot, add cumin seeds and fry it. After roasting the cumin seeds, add asafetida, turmeric powder, coriander powder and kasoori methi and fry the spices lightly. After this, add ginger paste, tomato, green chilli and cashew paste and red chilli powder and fry the spices till oil starts floating on the spices.
After the masala is roasted, add salt, garam masala to the masala and mix 1/2 cup water. Add paneer pieces, capsicum and onion and some green coriander to it and mix it well. Cover the vegetable and let it cook on low heat for 4-5 minutes so that all the spices in the paneer and capsicum and onion are soaked properly. Check the vegetable. Chopped paneer is ready. Take out the vegetable in a bowl.
