This will make the mixture fermentable and double its size. Now peel and mash the boiled potatoes. Also, put oil in the pan and heat it. When the oil is hot, add onion and fry it lightly. Then put coriander powder, turmeric powder, red chilli powder, mango powder, salt, green chilli and ginger in the pan and fry for 1 minute.
After this, add peas and 2 tablespoons of water to the spices and cover it and cook until the peas become soft. Then add mashed potato to the spices and fry for 2 minutes. After this, put green coriander in the pan and remove it from the gas and keep it aside. Now it’s the turn to make dosa. For this, first, stir the rice mixture once. It should be slightly diluted with fritters. If it is too thick, then add a little water and then mix it well.

When the dosa sinks lightly, place 2 tablespoons of masala (potato mixture) in the middle of the two and spread it well.
